Chef and owner Nick Ronan has handpicked some of the top natural wines out there. His charismatic passion for great food is as tremendous as his love for well crafted wines. He has managed to put together an eclectic and interesting wine list, and is selling them in the middle of Castro. The priority of Bisou is focussed on quality and passion, period! They won’t overlook the details when it comes to transmit this passion to their customers. I highly recommend the place. Perhaps try the Luquettes Natural Bandol Rouge with their CreekStone New York Steak ”Menage a Trois”, served with 3 types of amazing sauces!

Pascal Simonutti of Domaine du Pré Noir hails from the Loire Valley near the town of Mesland. Here he crafts wonderful wines from the notoriously difficult grape variety Pineau d’Aunis. His 100% Pineau d’Aunis Vin de Table which weighs in at a mere 12% alcohol is fresh, vibrant and compelling drinking.

All of his wines have quirky names and equally quirky labels such as his Boire Tue (Drink kills) made from 60% Gamay and 40% Pineau d’Aunis.

Clos Rocca is located north of Sete in the Languedoc, they have been biodynamic for the last 8 years and will be certified for the 2010 vintage. BIODYNAMIC and Natural fermentation.

A special cuvée created in 2003 in a year which was just as special.
It was produced from a plot of 11 year old vines on a south facing slope of the very early middle Turonian stage.

Vines age: 11

Trellising: 4 threads.

Cropping: Maximum 2 per year to 2 meters.

Size: Guyot simple alternative to 7 eyes + a courson to 2 eyes  against debudding for a yield of 50 hl.

Harvest: Manual harvest on 13 October 2007.

Vinification: Vatting after stemming and start fermentation after 3 days. No yeast or enzymes. Malolactic fermentation under marc after 22 days of maceration. Filtration: On fine earth (DIFBo) before bottling.

Philippe Pacalet is a vigneron of the young generation in Burgundy. He is 41, was formerly estate manager at the Domaine Prieuré Roch (until 1999), he now rents a collection of vineyard plots in the Beaune area and expertly vinifies his natural wines in 3 differents chais a few kilometers from each other. His wines are now widely appreciated, in France and abroad . We visit his first location, in Baune. There, in an old building in the historic part of the town, he vinifies for Domaine Sabre from the grapes of a 2,5 hectare vineyard surface, scattered over a number of plots : Generic red Burgundy ( Pinot Noir of course ), generic white ( Chardonnay ), a little of Bourgogne Aligoté, Pommard (1 hectare) and Beaune 1er Cru. Even when working for Sabre, he puts his personal imprint on the wine, and the labels say “Domaine Sabre – Philippe Pacalet”.
